Grilled Chicken Salad with Honey Mustard Dressing

Ingredients:

  • 2 boneless chicken breasts
  • 1 tbsp olive oil
  • Salt and black pepper (to taste)
  • 4 cups mixed greens (lettuce, spinach, arugula)
  • ½ cup cherry tomatoes (halved)
  • ¼ cup red onion (thinly sliced)
  • ½ avocado (sliced)
  • ¼ cup shredded carrots

For Dressing:

  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • Salt and pepper (to taste)

Process:

  1. Brush chicken breasts with olive oil.
  2. Season with salt and pepper.
  3. Grill for 6–7 minutes on each side until cooked through.
  4. Let rest for 5 minutes, then slice.
  5. In a large bowl, combine greens, tomatoes, onion, avocado, and carrots.
  6. Mix all dressing ingredients in a small bowl until smooth.
  7. Drizzle the dressing over the salad and top with sliced chicken.
