| Juicy grilled chicken salad drizzled with homemade honey mustard dressing — a perfect healthy meal. |
Ingredients:
- 2 boneless chicken breasts
- 1 tbsp olive oil
- Salt and black pepper (to taste)
- 4 cups mixed greens (lettuce, spinach, arugula)
- ½ cup cherry tomatoes (halved)
- ¼ cup red onion (thinly sliced)
- ½ avocado (sliced)
- ¼ cup shredded carrots
For Dressing:
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- Salt and pepper (to taste)
Process:
- Brush chicken breasts with olive oil.
- Season with salt and pepper.
- Grill for 6–7 minutes on each side until cooked through.
- Let rest for 5 minutes, then slice.
- In a large bowl, combine greens, tomatoes, onion, avocado, and carrots.
- Mix all dressing ingredients in a small bowl until smooth.
- Drizzle the dressing over the salad and top with sliced chicken.
