Fluffy Buttermilk Pancakes

What you need

  • 2 cups all‑purpose flour
  • 2 Tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk, shake it up good first
  • 2 large eggs
  • 4 Tablespoons unsalted butter, melted and let to cool a bit
  • 1 teaspoon vanilla extract, if you like it
  • A little butter or oil for the pan
  • Maple syrup, more butter, and some berries for serving

How to make them

  • Get a big bowl. Put in the flour, sugar, baking powder, baking soda and the salt. Mix it around with a whisk so it’s kind of all even. You don’t need to beat it to hard.
  • In another bowl that is smaller, crack in the eggs. Pour in the buttermilk, the warm (not hot) melted butter, and vanilla. Whisk this until it look smooth and there’s no big streaks of egg left over.
  • Now pour the wet stuff into the dry stuff. Use a spoon or a spatula and stir slow. Stop when most of the flour is mixed in; some little lumps is okay and normal. If you mix it too much the pancakes gets tough and not so fluffy.
  • Put a skillet or griddle on the stove over medium heat. Let it heat up a minute or two. Rub a thin layer of butter or oil over the pan, but don’t let it start smoking, that’s to hot.
  • Drop the batter on the pan, about 1/4 cup for each pancake, but you don’t got to measure perfect. Leave space so they don’t run into each other.
  • Cook until you see bubbles popping on the top and the edges are looking more dry and set, this usually take around 2–3 minutes but stoves are all a bit different. Try not to move them around while there cooking.
  • Flip the pancakes gentle with a spatula. Cook the other side 1 to 2 more minutes, until the bottom is golden brown and the middle feels cooked through when you press light on it. If they brown to fast, turn the heat down a little bit.
  • Take them off the pan and serve them while they still warm. Put butter on top, pour maple syrup, and add berries or whatever toppings you like best. You can keep them on a warm plate if you not eating them right away.
